4. Adjusting Fluid Balance

Celery is very high in potassium and this mineral plays an important role in many processes in our body. Scientists believe potassium is the third most important mineral for our bodies to function properly.

In the body there is about 60 percent water and 40 percent of this water is found in your cells. The rest is outside the cells, in the spinal fluid, in the blood, and between the cells.

The water level inside and outside the cell is very important and is influenced by the electrolyte concentration. Potassium dissolves in water and behaves in body systems, like a positively charged electrolyte, and regulates water levels in cells.

Well, celery is one of the natural ways to prevent it. That’s because celery contains lots of vitamin K and a study has shown that vitamin K increases our sensitivity to insulin.

6. High folate

Folate is one of the B-group vitamins and is an essential ingredient for red and white blood cells in the spinal cord, also plays an important role in converting carbohydrates into energy, breaking down protein, and producing DNA.

One cup of celery juice contains 145 micrograms of folate which is more than 36 percent of the recommended intake for men and women, and 29 percent for pregnant and lactating women.
