1. Extra virgin olive oil
Olive oil of this type is free from taste or odor defects. No chemicals or extreme heat are used in the extraction process. It is known to have a superior taste and an acidity of not more than 0.8 percent according to the parameters that determine the quality of the oil. Extra virgin olive oil is great for salads.
2. Virgin olive oil
The word “virgin” indicates that the oil is extracted by pressing the olives. No external heat or chemicals are used in the manufacturing process and the oil is pure. This type of olive oil has a free acidity of up to two percent, both frying and sautéing, says Yasmin.
3. Olive oil
This oil is made by mixing refined olive oil with virgin grade olive oil. Olive oil is refined using charcoal and other chemical and physical filters but does not change the structure of the glycerides. This type of oil is best suited for casual cooking, advises Yasmin.
